Sugar & Sage Bakery’s Apple Cinnamon Crumble Pie Recipe

Jill Bates, Executive Pastry Chef of Sugar & Sage, is on Good Day to demonstrate how to prepare Apple Cinnamon Crumble Pie, one of their most well-liked holiday dishes.

Executive Pastry Chef Jill Bates from Sugar & Sage’s recipe:

Ingredients:

Filling an apple


  • 9 granny smith apples, peeled and sliced

  • 2 tablespoons of cinnamon

  • 2 tablespoons of ginger

  • 1 t nutmeg

  • 1 tablespoon of vanilla extract

  • 1 cup sugar

  • 1 cup brown sugar

  • 1 tablespoon of lemon juice

  • 3 tablespoon cornstarch

Directions:

1. Put the apples and all the dry ingredients in a bowl.2. Put aside till the pie dough is finished.

Pie Dough


  • 2 cups all-purpose flour

  • 1 tablespoon granulated sugar

  • 1 teaspoon salt

  • 1 stick plus 4 tablespoons unsalted butter, cut into 1/2-inch dice

  • 1/4 cup plus 1 tablespoon ice water

Directions:

1. Pulse the flour, sugar, and salt in a bowl or in a food processor.2. Pulse in the butter until it resembles tiny peas. To evenly moisten the pastry, add the ice water and pulse. After transferring it to a work area, knead it two or three times, or until dough comes together.3. Split the pie dough in two parts. Each dough should be rolled out to a thickness of approximately 1/4 inch on a floured board.4. Give the pie tin a spray. Gently push one piece of pie dough into the pan to make it. Put the apples in. Put another piece of pie dough on top. Apply pressure to the pie dough along the pan’s edge. Cut off the access dough with scissors. Using your fingers or a fork, crimp the dough. To set, put the pie in the freezer for five to ten minutes.

Crispy Top


  • 1 cup brown sugar

  • cup oats

  • cup flour

  • 1 t cinnamon powder

  • cup butter

  • teaspoon salt

Directions:

1. In a bowl, combine all the ingredients.2. Using your hands, mix until the butter breaks up into pebbles. Put aside

Assembly:

Preheat oven to 350 degrees.

Step 2: Insert the apple into the prepared pie crust.

3. Add apples and a crisp topping on top.

4. Bake until the apples are soft and bubbling, about 1 hour.

5. Serve with vanilla ice cream or whipped cream after letting it sit for five to ten minutes.
