Making ‘Pie Tin Nachos’ at Lazy Dog Restaurant
Ingredients:

3 T. Butter

1 tsp. Garlic, fresh chopped

3 T. Flour
-
tsp. Salt
-
1/8 tsp. White pepper
-
1/8 tsp. Nutmeg

1/2 cup Whoa Nellie Lager
-
1 cup Water
-
1 cup Half & Half
-
1 lb American Cheese, cut into 1″ chunks
-
lb Cream Cheese, cut into 1″ chunks
Cheese sauce, guacamole, tomatoes, pickled jalape o, tapat o crema, cilantro, Nellie Mexican-Style Lager, and Whoa are the toppings.
Directions:
1. Put butter and garlic in a sauce pot over low heat. To soften the garlic, cook it for two to three minutes.2. To make a roux, combine flour, salt, white pepper, and nutmeg and simmer over low heat. Cook for two to three minutes without browning.3. Pour in beer and whisk until the beer is cooked out and well mixed. Three to five minutes.4. Simmer for three to five minutes, or until slightly thickened, after adding the water and Half & Half.5. Turn off the heat and mix in the cheeses until they are melted, smooth, and well mixed.6. If used, store in a double boiler; otherwise, chill and store in the refrigerator for later use.
