Chilly temps mean chili season: How to make brisket chili

Chili season comes with cold temperatures! One90 Smoked Meats’ Kyle St. Clair joins Good Day to demonstrate to viewers how to prepare brisket chili over mac and cheese.

Brisket ingredients:


  • 3 pounds of brisket

  • 1 can of Coke or Dr. Pepper

  • 1 medium onion

  • 1 bell or poblano pepper

Directions:

1. Begin by sautéing the peppers and onions in some oil or butter.

2. Stir in the meat, then add the water and soda. Simmer until the meat is cooked and can be whisked to pieces.

The water will simmer off.

Chili ingredients:


  • 2 qt of water

  • 14oz can crushed tomato

  • 2oz Worcestershire

  • 2oz vinegar

  • 2oz ketchup

  • cup creole mustard

  • 3T paprika

  • cup chili powder

  • 2T garlic powder

  • 2T cumin

  • 1T cayenne

  • 1t honey

  • salt to taste

  • 1T pepper

Directions:

Cook the beef in a pot with tomatoes, worcestshire sauce, vinegar, ketchup, and mustard.

In a different bowl, In a mixing bowl, combine water, cayenne, cumin, garlic powder, and chili powder until smooth. Then, add to the pot and stir thoroughly.

Fill the saucepan with water and spices.

To taste, add salt, pepper, and honey.

Simmer until the desired thickness is reached, 15 to 20 minutes.
